Danger Zone is the temperature range between 5oC and 60oC within which the bacteria grow rapidly. Therefore, always keep hot food hot (temperature>60oC) and cold food cold (temperature<5oC).The former is known as "Hot Holding" and the latter is known as "Cold Holding".
